1500g 53 z whole milk
300g 12 oz sugar
150g 5.3 oz cream
60g 5.3 oz Paste
Base qty depends on which you use. Do not forget to use your Base. This is just the paste to flavor your gelato
METHOD OF PREPARATION
1. Heat your milk in a saucepan to 104 F
2. At 40°C/104°F, combine dry ingredients and add to saucepan.
3. Pasteurize the mix to 85°C/185°F; begin cooling process.
4. At 65°C/149°F, add heavy cream and paste or flavoring of your choice; cool to 4°C/41°F.
5. Allow mix to age for 4 hours in fridge .6. Pour in batch in ice cream machine
